We have 200 taps with plans to expand to 1,000 over the next five years. We're making it work on a homemade arch, saving money for the rig of our dreams. The wood we burn is dead-standing softwood from our own property, pine and fir from various tree jobs, or slabs from milling. It takes around 40 gallons of sap to make a gallon of syrup, so this is definitely a labor of love. We couldn't imagine a spring without steam in our faces (and a beer in our hands).
